How to make High Protein Plant-Based Bento Box

Hi there!
Today I want to talk about how to make a high-protein plant-based BENTO box.
Vegan or Vegetarian people are always getting enough vitamins from lots of vegetables but our bodies need protein as well so this post will concentrate on protein.
Where I work, I see sometime vegan people don’t know how to take protein also which vegetables has high contain protein.

BENTO INGREDIENTS

Good plant-based sources of protein:
Aburaage – Deep fried tofu pouch.
Chickpea
Tofu
Quinoa flakes
Sunflower seeds or pumpkin seeds
Red rice
Black rice
Mushrooms
Eggplant
Tamari
Soy sauce

Ingredients

Enoki and Aburaage

  • 100 g Enoki mushroom
  • 1 each Aburaage
  • 1 tsp Ginger Tube
  • 1 tbsp Sesame oil
  • 1 tbsp Tamari (soy sauce)
  • 1 tbsp Sake
  • 1 tsp Sugar

Carrot and Sultana (raisins)

  • 80 g Carrot
  • 35 g Sultana
  • 1 tbsp Olive oil
  • 1 tsp Apple Vinegar
  • 1 tsp Maple Syrup
  • ¼ tsp Cumin
  • ½ tsp Salt
  • tsp Pepper

Chickpea and Tofu Hamburg (Rissoles)

  • 125 g Chickpea Tinned
  • 75 g Tofu
  • 65 g Onion *
  • 50 g Carrot *
  • 100 g Zucchini * ½ each
  • 30 g Mini Capsicum *
  • 1 tbsp Sesame oil *
  • 5 tbsp Quinoa flakes
  • ½ tsp Ginger Tube
  • ½ tsp Salt

Sauce for chickpea and Tofu Hamburg

  • 2 tbsp Tamari (soy sauce)
  • 1 tbsp Sake
  • 1 tsp Ginger
  • 1 tsp Sugar
  • 1.5 tbsp Sesame oil

Eggplant and Mushroom Kinpira

  • 160 g Eggplant 1 each small one
  • 100 g Zucchini ½ each
  • 2-3 each Brown mushrooms
  • 1 tbsp Sunflower seeds
  • 2 tbsp Sesame oil
  • 1.5 tbsp Tamari (soy sauce)
  • 2 tbsp Sake
  • 1 tbsp Sugar
  • ¼ tsp Chilli flakes

Instructions

Enoki mushroom and Aburaage

  • Boil water and add aburaage to remove excess oil (1-2mins is enough).
  • Remove the aburaage from the boiling water and let cool.
  • Wash enoki, trim the edges then cut in half.
  • Remove excess moisture from aburaage and slice it.
  • Add 1 tbsp of sesame oil into a pot and turn heat to mid.
  • Add the enoki and aburaage into the pot and stir.
  • Add 1 tsp of ginger, 1 tsp of sugar, 1 tsp of sake into the pot than stir.
  • Add 1 tbsp of soy sauce into the pot and stir.
  • Turn off the heat and let cool.

Carrot and sultana or raisins salad

  • Wash and shred the carrot.
  • Add sultanas or raisins into a bowl.
  • Add the shredded carrot into the bowl.
  • Add 1 tsp of apple vinegar, 1 tbsp of olive oil, 1 tsp of maple syrup, ¼ tsp of cumin, ½ tsp of salt and 1/8 tsp of pepper into the bowl and mix well.

Chickpea & tofu Hamburg (Rissoles)

  • Wash all the vegetables, chop 65g of onion, 30g of mini capsicum, 50g of shred carrot, and shred 100g of zucchini.
  • Heat up a frypan over a mid-heat and add 1 tbsp of sesame oil.
  • Add all the chopped vegetables to the frypan, stir, and cook until the onion is soft. Turn off the heat and let cool.
  • Add the chickpeas and tofu into a blender and blend well.
  • Add the blended mix into a bowl.
  • Add the cooked vegetables into the bowl.
  • Add ½ tsp of ginger, ½ tsp of salt and 5 tbsp of quinoa flakes into the bowl and combine well.
  • Heat up a frypan over a mid-heat and add 1.5 tbsp of sesame oil.
  • Form the chickpea and tofu mix in to 7-8 ball-shaped portions and add to the frypan.
  • Cook one side until a light brown colour and turn over and do the same.
  • Add 1 tbsp of sake, 1 tsp of ginger, 1 tsp of sugar to the frypan.
  • Add 2 tbsp of soy sauce to the frypan and turn over the Hamburg.
  • Turn off heat.

Eggplant and mushroom KINPIRA

  • Wash all the vegetables.
  • Cut eggplant and zucchini in to bite-sized pieces.
  • Remove the core and slice the mushroom.
  • Heat up a frypan over a mid heat and add 2 tbsp of sesame oil.
  • Add the eggplant to the frypan, stir, and cook until half done.
  • Add mushroom and zucchini to the frypan and stir.
  • Add 2 tbsp of sake, ¼ tsp of chilli flakes, 1 tbsp of sugar and stir well.
  • Add 1 tbsp of sunflower seeds and stir.
  • Add 1.5 tbsp of soy sauce and stir well then turn off the heat and let cool.

Pack all dish to a bento box

  • Put cooked rice into a bento box.
  • Add all the cooked ingredients to the bento box.

You can prep before day

Enoki & Aburaage
You can cook it the day before and store in your fridge. It will actually taste better because the aburaage and enoki soak up the sauce.

Carrot and raisin salad
Shred carrot and add raisin then mix in the dressing. The next day the dressing will have soaked into the raisins.

Egg plant, mushroom & zucchini KINPIRA*
Cook all ingredients in sauce. Like the enoki and aburaage the eggplant will soak up the sauce and taste better.

Chickpea & tofu Hamburg (Rissoles)
Using ready-cooked tinned chickpeas is easy but you can also use dry beans, soak 1 day, then cook the next day. Make rissoles before day and next day, just cook with frypan.

Cook rice and freeze in small portions.
Being Japanese, I really love cooked rice, so I always cook a lot and freeze in small portions. Because I am always busy it’s good to always have in the freezer when I need it.

*What is Kinpira
Kinpira is a Japanese cooking method in which root vegetables like burdock, carrot, lotus roots etc, are simmered in a sweet soy sauce. You can use other vegetables but these are most commonly used in Japan.

How much protein do you need in one day?
As you know, vegetarian or vegan people always eat lot of vegetables but you need good proteins as well. For woman at east 40g a day and for men at least 50g. If you exercise often or have a higher-than-average muscle mass then you’ll need more.
0.8g protein per kg body weight
EX 50kg of weight X 0.0008 = 40g
Athletes or highly active people need from 1.4 g of protein per kg body weight.

Legume

Yes, plant-based diets can be high protein, but some ingredients contain the 9-essential amino-acids found in animal protein.

Animal protein contains these essential amino-acids and is called a complete protein. Vegetable protein doesn’t usually have these essential amino-acids and is called an incomplete protein but that doesn’t mean amino-acid content is zero. However, some vegetable protein, such as soybeans, quinoa, or buckwheat kennels do contain the 9-essential amino acids so they are a complete protein.

How to ensure good protein intake for Vegans.
Mixing a few kinds of vegetable protein and using complete proteins will ensure an adequate protein intake. Soybeans or legumes don’t contain methionine, but seeds and nuts do. Seeds and nuts don’t contain lysine and threonine, but legumes do so mixing them in a dish will increase the amount of complete protein.

What are the 9 essential amino-acids?
• Valine
• Leucine
• Isoleucine
• Threonine
• Methionine
• Lysine
• Phenylalanine
• Tryptophan
• Histidine
These are used for muscle repair/growth, metabolism, immune functions, etc.

Snack

Have a snack between meals
If each meal doesn’t contain enough nutrients or sometime you don’t have time to eat because of work or whatever reasons, have a snack between meals like nuts or seeds. Theses day you can buy snack packs at supermarkets or make small portions of nuts and seed at home and take with you.

How to Cook Multigrain Rice without Rice Cooker

Hello there.
Today’s post, how to cook multigrain rice. Such as, red rice, black rice, and quinoa.
I’ve also made videos, so check them out as well.

Where you can get red and black rice.
You can buy at Coles, Woolworth, Vegetable markets or health food shops.

In China, only those belonging to the upper classes could afford to eat them.

Multigrain rice

How to make Japanese rice with multigrain perfectly without a rice cooker.
Cuisine Japanese
Prep Time 40 minutes
Cook Time 15 minutes

Equipment

  • Pot

Ingredients

  • 365 g Japanese rice or medium size rice
  • 95 g Black rice
  • 95 g Red rice
  • 60 g Quinoa
  • 630 ml Filtered water

Instructions

  • Weigh 95g each of red rice and black rice.
  • Weigh 365g of Japanese rice.
  • Weigh 60g of quinoa.
  • Add red rice, black rice and Japanese rice into a bowl.
  • Add water into the bowl and wash the rice.
  • Strain the rice into a strainer.
  • Put the 3 kinds of rice back into the bowl and wash again.
  • Repeat 3-4 times.
  • Add the quinoa into a bowl and wash.
  • Strain the quinoa into a strainer and repeat 2-3times.
  • Add the 3 kinds of rice and quinoa into a pot.
  • Add 630ml of filtered water, cover with a lid, then leave 40-60mins to soak.
  • Turn heat to mid and bring the water to the boil (takes about 6-7mins)
  • Once the water boiling, reduce the heat to low and simmer until the water is gone. (takes about 6-7mins)
  • Once the water is gone, turn off the heat and wrap the lid with towel and leave 30mins.
  • After 30mins, mix well.

Black rice has high nutritional content such as vitamins, iron, protein, phosphorus, calcium and minerals. Also, it is low GI.
It’s good in minestrone soup or porridge.

Red rice is high in vitamins and minerals.
It’s good in seafood Paella with or porridge.

Why use multigrain rice instead of using white rice?
Because multigrain rice or quinoa contains protein, mineral, vitamins, calcium etc. Vegetarian or vegan people should eat often because your body needs proteins.

Using a pot for cooking rice tips:

1. Wash rice properly.
2. Before cooking the rice, leave 40-60mins (wintertime 60+mins. )
3. After cooking the rice, wrap the lid with a towel and leave 30mins.

Japanese rice

The tips you need for perfectly cooked rice using a pot.

Ingredients

  • 360 g Japanese rice or medium size rice
  • 360 ml Filtered water

Instructions

  • Wash 360g of Japanese rice or medium sized rice in a bowl.
  • Strain the water and put the rice back into the bowl and wash again.
  • Repeat 3-4times.
  • Put the rice into a pot and add the 360ml of filtered water than put a lid and leave 30mins. (wintertime leave 40mins).
  • Turn heat to mid and bring the water to the boil (about 6-7mins).
  • Once the water is boiling, reduce the heat to low and simmer until the water is gone. (about 6-7mins).
  • Once the water is gone, wrap the lid with towel and leave 30mins.
  • After 30mins, mix well.

おうちカフェメニュー!デーツプディング(スティッキーデーツ)&バタースコッチソースの作り方

おうちでカフェスタイルのデザートはいかがでしょうか?
ここオーストラリアではよくみかけるデザートの作り方、
デーツプディングとバタースコッチソースです。

必要なもの:

デーツ(ナツメヤシ)カルディ、楽天、コストコで販売、オタフクソースさんでも販売しているらしい。

今回、私が使用しているのは種無しです。種が入っているデーツを煮るときはタネを必ずとってください。

バタースッコチソース:
黒砂糖を使う人もいますが、私はグラニュー糖かローシュガーを使用しています。
ゆっくりと砂糖を濃い目の茶色になるまで煮詰めてバターとクリームを入れた
バタースッコチソースは最高です。
食べる前には私はソースを少し温めてかけます。アイスクリームがほんのり溶けてソースと一緒に食べると最高です。

バター:

有塩のものを使用しています。その代わり改めて生地やソースには塩を入れていません。

第2次世界大戦中、カナダの空軍オフィサーがイギリスのホテル滞在中にホテルのマネージャー、パトリシア.マーティンという女性にレシピを渡して, そこで作られたものだそうです。

デーツプディングとバタースッコチソース

濃厚バタースコッチソースとアイスクリームで食べるモイストなデーツプディング

  • フードプロセッサー又はミキサー

Ingredients

デーツプディング生地

  • 170 g 種無しデーツ
  • 250 ml フィルター水
  • ½ 小さじ 重曹
  • 60 g バター
  • 170 g 小麦粉
  • 100 g 砂糖 グラニュー糖またはローシュガー
  • Mサイズ
  • ½ 小さじ ベーキングパウダー

バタースッコチソース

  • 100 g 砂糖 グラニュー糖またはローシュガー
  • 100 g フィルター水
  • 100 g バター
  • 100 g 生クリーム

Instructions

  • 最初にデーツを煮ときます。170gの種無しデーツと250mlのフィルター水を鍋に入れる。
  • 中火にセットしてデーツが柔らかくてなるまで煮る。デーツが柔らかくなったら火から外して冷ましておく。
  • 冷ましている中、バタースコッチソースを作る。
  • 100gの砂糖、100gのフィルター水を鍋に入れて、中火にセットして濃い目の茶色になるまで煮つめていく、この時、常に撹拌していてください。目を離すとすぐに焦げます。
  • 濃い目の茶色になったら火から外して、100gのバターを入れて溶けるまで混ぜる。
  • バターが溶けたら、100gの生クリームを入れてよく混ぜる。この時、指などを使って味見をしないでくださいね!すごく熱いです、火傷します!
  • プディング生地を作っていきます。オーブンは160度にセットしておく。
  • 先程の煮デーツ(冷めているかチェック)に小さじ½ の重曹を入れてよく混ぜておく。
  • 60gのバター、100gの砂糖をフードプロセッサーに入れて撹拌する。
  • 卵2つを追加してさらに撹拌する。
  • バターミックスをボールに移しておく。
  • 煮デーツをフードプロセッサーに入れてペースト状にする。
  • 170gの小麦粉+小さじ½のベーキングパウダーをバターミックスに振るいながら入れていく。
  • 粉気がなくなるまでよく撹拌する。
  • ペースト状のデーツを追加してさらによくまでる
  • よく混ざったら、マフィン型に入れて160度20−30分焼く。
  • 約20ー25分後、串をさして何もついてこなければ大丈夫です。
  • 食べるときはソースとマフィンを温めてバニラアイスを提供すると美味しいです。

気をつけること:
デーツのタネは取ること。
デーツを煮た後、重曹を入れる前に粗熱は取ること。
粉は振ること。
バタースッコチソースを作るとき、砂糖を煮るときは目を離さないこと、
すぐに焦げてしまいます。
砂糖を煮ているときは常に撹拌すること。
バターと卵が分離していても大丈夫です。
ほぼ、混ぜるだけでできます。
意外と簡単なデザートですので、お友達やご家族に作っておうちカフェしてみてください。

ここオーストラリアではたくさんのレストラン、カフェで提供しているデザートです。私の周りの友人も大好きです。もちろん主人も大好きで家で作ると喜んでいます。

食べるときはマフィンとソースは温めたほうが美味しいです。その上にバニラアイスクリームまたはホイップクリームを添えてくださいね!

How to make Red Shiso-Shu (Red Perilla with vodka)

Hi ALL!!

Would you like something a little bit different for Valentine’s Day? You can give it as a present or drink it yourself.
This is how to make red Shiso-Shu using the Japanese Shiso herb (Perilla) and vodka. It tastes like nothing you’ve ever had before but is so easy to make.

WHAT YOU NEED:

Red Shiso
Where to buy Shiso leaves? Korean shops, Japanese shops, Asian shops, herbs shops.

Vodka
I used a vodka from Tasmania this time, but you can use your favourite.

Shiso and vodka

Filtered water
I use a BRITA filter but there are a few brands on the market.
You can buy BRITA at Coles, Woolworth, Target, BIG W.
You can also use bottled water if you like.

Apple vinegar
I used Mazzetti Organic Apple Cider Vinegar.

Shiso-Shu

A little something different for Valentine's day

Ingredients

  • 70 g Red Shiso Perilla or beefsteak plants
  • 700 ml Vodka
  • 400 g Sugar
  • 150 ml Apple vinegar
  • 1 L Filtered water

Instructions

  • Wash Red Shiso.
  • Sterilize bottles in boiling water.
  • Add 1000ml (1L)of filtered water into a pot
  • Bring the water to the boil, add the Shiso, and cook 5-6mins.
  • After 5 mins, remove Shiso and strain the water to other pot or bowl by through sieve.
  • Add 400g of sugar into the Shiso juice and mix well and cool down.
  • Once cooled, add 150 ml of apple vinegar and mix well. The colour should change to a nice dark pink.
  • Add 700ml of vodka into the Shiso juice and mix well.
  • Pour the Shiso-Shu into bottles and keep in your fridge.

Shiso, sometime called Beefsteak Plant in English because it’s red colour looks like red meat.
In Japan we use a lot of Shiso, with sashimi, Soba noodles, chicken, fish, or beef dishes, and making drinks.

How to store Shiso
• Wrap Shiso leaves one by one with wet kitchen paper and put in an airtight container or sealed bag. Keep it in the vegetables compartment of your fridge.
• If you want to store a long time, wash and dry out the Shiso then and wrap with plastic one by one and keep in your freezer.

You can ask shops that sell herbs about Shiso or you can grow it yourself.
I just ordered some Shiso plants from a herb garden near me. I am so looking forward to them coming!! It was 1 pot $ 5.50 AUD. I am going to research how to grow Shiso at home so I can grow my own.

For a Valentine’s Day present how about making this Shiso-Shu instead of buying Chocolate?
This Shiso-Shu you can drink straight, however, it is easy to drink so please don’t drink too much otherwise you can’t go to work next day hahaha!
This is another similar concept to my limoncello recipe.
