What you need for buffalo chicken wings

Ranch dressing or sauce – easy to make and you can use as dressing. Some people use blue cheese sauce, but my husband doesn’t like blue cheese, so here I use super easy ranch sauce.
So, let’s make it, bite one, and don’t worry about your face being covered in Buffalo sauce!!
Today’s blog is an Izakaya favourite, how to make Yakitori at home with using a frypan.
Everybody who visits Japan loves yakitori. I love Yakitori, especially from the small shops you find in the back streets of Japan.
When I was young I used to go to yakitori shops after work, they were dirty and smokey but cheap and the yakitori tasted so good. One yakitori was $0.80-$1.20 so I would eat lots.
You can make yakitori at home using a frypan or your BBQ if you prefer.
What you can use for yakitori
Thigh or breast chicken
Chicken skin
Chicken wings
Chicken tenderloin
Pork
Beef
Spring onion
Cherry tomato
Asparagus
Garlic
Mushroom
Onion
Jalapeno etc.
About Yakitori sauce
Soy base sauce
Salt
Actually, I like salt so when I go to yakitori restaurants or shops, I order salt.
Cut spring onion (only use the white parts) to 2-2.5 cm pieces.
Skewer the chicken and spring onion.
Making the sauce, add all ingredients into a pot.
Turn heat to mid and melt everything.
Once ingredients are melted, turn off heat.
Turn heat to mid and add 2 tbsp of rice oil into a frypan once it’s hot.
Once the frypan is hot, add the skewered chicken and cook one side until light brown.
Turn over the chicken (yakitori) and cook until light brown.
Pour 2 tbsp of the sauce you made earlier over the chicken then turn over the yakitori few times. Cover the yakitori with sauce and cook the chicken through. (Check the heat if you need reduce heat to low and also you can add the sauce more if you need.)
Place the Yakitori on a plate.
If you prefer to salt your yakitori, use sea salt instead the soy-based sauce.

About Yakitori shops
In Japan, you will find lots of Yakitori shops or restaurants. From cheap yakitori shops full of businessman eating with their boss or co-workers to pricy yakitori restaurants for couples or businessman to wine and dine their customers.
I prefer the cheap yakitori shops because they always have a good atmosphere and sometimes you talk with other customers. The fine dining restaurants are good atmosphere and good food but just not the same.
This recipe is using a frypan to make great tasting yakitori at home.
The sauce is so easy to make.
Using a frypan or hot plate
It is hard to cook at home using a Yakitori grill because your fire alarm will go off from the smoke. Of course, you can use the BBQ outside.
Also, if you have Japanese grill (Hibachi) at home and you can use charcoal.
About skewer
If you don’t have or want to use skewers you don’t have to. There’s NO RULES!! Hahaha
If you use BBQ or Japanese grill, before skewer chicken, soak skewers in water for 20-30mins so they don’t burn.

Anyway, yakitori is good with cold beer, especially in summer after working hard. Just drink cold beer and sink your teeth into a piece of yakitori ….“うめぇ〜” (ume-) meaning “ Yummy”. Don’t say it if you are a proper lady though. Hahaha.
It’s almost Christmas! Being Japanese my parents were always busy so I never did Christmas dinner at home and as a chef was I was always working making Christmas food for people. My current job is we are closed over so we can have Christamas dinner with my friends and my family which is very nice. It’s very nice to go out for lunch or dinner but I like having friends and family at home too so I decided to make something different for this year.
I love BBQ so I thought why I don’t put BBQ sauce on a whole chicken and came up this recipe. I used Mrs H.S Balls Fruit Chutney from South Africa you can buy at Woolworths. You can also make fruit chutney, or you can use any brand you like. This recipe will make twice the BBQ sauce you need but you can also use it for beef dishes or for bolognaise sauce as well. If you’re still thinking about dinner ideas, how about this recipe! I am sure your friends or family will like this!
This recipe is so easy and quick, healthy but make your tummy full. Marinade chicken with Ras El Hanout and put the spice into the dressing and using fresh Orange and lemon juice and few different spices in it.

If you are Vegetarian or vegan, you can put avocado, tofu, beans, mushrooms, egg plants for proteins.

About chicken, I like using thigh chicken but if you prefer breast chicken or tenderloin yes of course you can use them.
About Ras El Hanout, means top of the shop or head of the shop. For making this and spices you are using, you can get at shops or markets and you can make it so easy also you can buy Ras El Hanout at shops. Grilled Chicken, Lentil salad with Ras El Hanout and Orange Dressing

Ras El Hanout and Orange Dressing

Instructions
Cut the chicken in to bite sized pieces and put it into a bowl.
Add 2 tbsp of Ras El Hanout, rub well, then leave for 30 mins.
Wash all the vegetables.
Tear 20g of lettuce and put in a second bowl.
Add 10g of fresh coriander into the lettuce bowl.
Slice 80g of cucumber and add to the bowl.
Shred 130g of red cabbage and add to the bowl.
Pour water into the bowl to give the vegetables a nice crunch.
Weigh 120g of lentils.
Wash the lentils then strain the water.
Put the lentils into a pot, add 300ml of water, then turn the heat to between mid and high and cook until boiling.
Once the water boils, turn heat to low, cover, cook for 20 mins.
After 20mins, check the lentils and if they are soft, strain, and let them cool.
Cut the skin off the orange then cut the orange in to 6-8 segments. (Do not throw the skin out after removal as we’ll used the juice from the remaining flesh for dressing)
To make the dressing, squeeze the juice from the flesh remaining on the orange skin, and a lemon, into a bowl.
Pour the citrus juice into your mixer and add 3 tbsp of olive oil.
Add 1 tsp of Ras El Hanout into the mixer.
Add 1 tsp of salt into the mixer then blend well.
Pour the dressing into a jar.
Strain the water from the vegetables and dry them out.
Add 2 tbsp of olive oil to a fry pan over a mid to high heat.
Once the frypan is hot, add the chicken and cook until one side is nice and crunchy.
Once one side of the chicken is crunchy, turn the chicken over and cook until that side is the same.
Check the heat of the frypan so that you don’t burn your chicken.
Cook the chicken through then turn the heat off.
Place the salad mix on your plate and top with the cooked lentils and chicken.
