Plant Based 2 Layer Coconut Yoghurt and Fruits Jelly

Plant based coconut and mix berries jelly, using Agar.
Creamy coconut milk and sour and sweet berries mix well. So easy to make it and looks pretty.

Where to buy agar:
You can buy at health-food shops and sometimes you will find at vegetable markets.

Agar

Coconut milk:
You will find supermarket like Coles or Woolworth.
I am using 1L of unsweetened coconut milk. Coconut milk in a carton is for good putting in coffee or tea, on cereal, Vegan, or dairy intolerant people who don’t like rice or soy milk.
Coconut milk in a tin is good for cooking such as curries or soups.

If you prefer, nut milk or nut yoghurt, you can use them.

About Agar powder:
Agar is more transparent than gelatine and doesn’t have any taste or smell so you can use it for lots of things.
I am using organic agar powder called Lotus Agar Powder which is easy to melt and easy to use.
Some products are not easy to melt, if so, add agar powder into some sugar and mix well. If you don’t want to use sugar, hot liquid and add agar powder by little bit.
Agar is quick to set so move quickly. When the coconut water jelly is set, start making the coconut yoghurt jelly.

Ingredients

Coconut water based

  • 1 each Kiwi
  • 180 g Frozen mixed berries you can use fresh
  • 250 g Coconut water Unsweetened
  • 2 tbsp Maple syrup
  • ½ tsp Agar powder

Coconut yoghurt based

  • 100 g Coconut milk Unsweetened
  • 70 g Coconut yoghurt Unsweetened
  • 3 tbsp Maple Syrup
  • ½ tsp Agar powder
  • ¼ tsp Vanilla bean paste

Instructions

Coconut water jelly based

  • Peel the kiwi’s skin and chop it in to smallish pieces
  • 180g of frozen mixed berries into a bowl and add the chopped kiwi.
  • Put all fruit into a mould.
  • 250g of coconut water into a pot and add maple syrup and agar powder.
  • Turn the heat to mid and simmer, stirring constantly, until all ingredients have melted.
  • Pour coconut water into the mould with the fruit but only half-way. Place the coconut water in the mould and into the fridge for 1 hour.

Coconut yoghurt based (After the coconut water jelly is set, start making coconut yoghurt jelly)

  • 100g of coconut milk into a pot and add maple syrup, vanilla bean paste, and agar powder then turn the heat to mid and simmer, stirring constantly, until all ingredients have melted.
  • Next, 70g of coconut yoghurt in a bowl and pour the coconut milk into the bowl and using a whisk, mix well.
  • Pour the coconut yoghurt mix into a jug then pour the coconut yoghurt mix into the top of the coconut water and place the mould in the fridge for 1 hour.
  • After 1 hour, remove jelly from mould.

おうちカフェ第三弾!簡単!時短!塩と胡椒のカラマリ(イカフライ)のサラダの作り方

今回のおうちカフェは塩と胡椒のカラマリのサラダです。簡単!時短!仕事帰りに疲れている時でもすぐに出来る夕飯またはビール、お酒の一品!
カラマリ(イカフライ)とはイカを粉にまぶして揚げた名前です。
ここオーストラリアでは殆どのカフェ、レストランやパブではカラマリと呼んでいます。Salt and pepper calamari salad。
たくさんのところは冷凍カラマリを使用しており、ただ揚げて提供しているところが多いですが、レストランではきちんとイカを下準備して片栗粉をまぶして揚げています。
ここオーストラリアでは日本のようにスーパーマーケットで生イカが手に入りづらいですが、冷凍のイカは売っているので今回は冷凍を使用しています。
もちろんシーフードマーケットでは生のイカは売っています。

カラマリ(イカ)のサラダ

塩と胡椒がきいて、外はカリカリで中は柔らかいカラマリ!

Ingredients

スパイス

  • 3−4 大さじ 片栗粉
  • ½ 大さじ ミネラルがたくさん含んだ塩がベスト
  • ½ 小さじ ガーリックパウダー
  • ½ 小さじ セロリソルト クレイジーソルトでもOK
  • 小さじ 胡椒

カラマリ(イカ)の下準備

  • サク イカ 生または冷凍
  • ½ 大さじ 料理酒

サラダとドレッシング

  • 人分 お好みのサラダミックス レタス、きゅうり、トマト、ラディッシュ、パプリカなど
  • お好みのドレッシング 今回はオリーブオイルとレモンを使用
  • 揚げ油

Instructions

スパイスを作る

  • 片栗粉、ガーリックパウダー、セロリソルト、塩と胡椒をボールに入れて混ぜておく。

イカの下準備

  • 生のイカを使用する場合は皮を剥き、格子状に切れ目を入れて短冊切りにする。
  • 切ったイカをボールに入れて酒を入れて揉んでおく。

サラダとドレッシング

  • サラダはお好みのものを使用してください。レタス、きゅうり、トマト、パプリカ、ラディッシュ、
    水菜、ブロッコリー、キャベツなどなど
  • ドレッシングはお好きなものをご使用ください。今回はシンプルにオリーブオイルとレモンです。
    ごまだれや和風ドレッシングでも美味しいです。
  • 鍋に油を入れて170度程度に温めて、イカにスパイスミックスを絡めて揚げていく。
    この時、いっぺんにたくさんを揚げないこと。
  • サラダミックスを皿にもりドレッシングをかけ、カラマリをのせてレモンまたはライムを添えて出来上がり。

卓上塩は使いません。
私が使用している塩はヒマラヤンピンクソルトかセルティックソルトを使用しています。

スパイスについて:
塩と胡椒でも十分美味しいですが、今回はガーリックパウダーとセロリソルトを使用しました。もし手に入らない場合はクレイジーソルトでも大丈夫です。
パプリカパウダーを使用しても美味しいですね!

サラダミックス:
お好きなものをご使用ください。
レタス類
トマト
きゅうり
ブロッコリー
アスパラガス
水菜
キャベツ
にんじん
だいこん などなど

ドレッシング:
今回はシンプルにオリーブオイルとレモンを使用しました。
ごまだれ
和風ドレッシング
クリーミータイプや醤油ベースどちらでも大丈夫です。

How to make Sushi Cake and Recipe. You don’t have to roll Sushi!

This blog is about making a decorative sushi cake.
When I say sushi cake it’s not a sweet cake but actually sushi that looks like a cake
You can make one for birthday, anniversary, kids party, Mother’s and Father’s Day or just for someone who loves sushi.
They taste as good as they look.

Ingredients

What you need:
Smoked salmon or sashimi salmon
Cucumber
Red radish
Egg
Sushi vinegar
Cooked multigrain rice or white rice
Tobiko -Tobiko is the Japanese word for flying fish row.
Where you can get it? – At Asian shops and seafood markets.

Scallop -sashimi grade
King fish – sashimi grade
Ham
Cheese
Roasted beef – cut thin
Prawn
Snow peas
Sugar peas
Broccoli
Lotus root

But everything I used this time you can get easily from supermarkets.

Decorative Sushi cake

Don't have to roll sushi! beautiful looking sushi for a party!

  • Cake tine Diameter 18cm x High 4.5cm

Ingredients

Kinshi- Tamago Egg crepe

  • 3 each Egg
  • 1.5 tbsp Sugar
  • 1 tsp Sake
  • ¼ tsp Salt
  • ½ tsp Rice oil

Sushi vinegar

  • 200 ml Rice vinegar
  • 40 g Sugar
  • 20 g Salt

Decoration sushi

  • 200-250 g Sliced smoked salmon
  • 1 each Cucumber
  • ½ each Avocado
  • 1 each Radish
  • 60 g Pickled ginger
  • All of Kinshi Tamago Egg crepe
  • Tobiko Garnish
  • 400-500 g Multigrain rice See how to cook multigrain rice*
  • 2 tbsp Sushi vinegar
  • a pinch salt For cucumber and radish

Instructions

Making kinshi tamago

  • crack 3 eggs in a bowl and add sugar, sake, and salt then mix well with a fork or chopstick.
  • Turn the heat to mid and add rice oil into a frypan. Spread the oil and wipe up the excess with kitchen paper. (Save the oily paper we’ll used it again)
  • Pour 1/3 of the egg mixture into the frypan and quickly swirl it around by tilting the pan in all directions.
  • Turn off the heat, cover, and leave 20-30 sec. Remove the lid and turn over the crepe gently using a chopstick then put the lid back and leave for another 20 sec. Remove the lid and gently place the crepe on an upturned sieve (so the sieve is like a mountain) to allow the crepe to dry completely.
  • Turn the heat to mid again recoat the pan with the oily paper (you saved it didn’t you) and pour 1/3 of the egg mixture into the frypan and repeat the crepe process. Do the same gain until the egg mixture is gone. Now you have 3 crepes on the sieve drying.

Making Sushi vinegar

  • put all ingredients into a pot and turn the heat to mid. Cook until the salt and sugar melt into the vinegar.

Making sushi decorations

  • First, the cucumber, peel the cucumber with a peeler so you get long strips. To make it easier stick a fork in the end of the cucumber to hold on to.
  • Put the strips into a bowl or on a tray and add a pinch of salt. Rub them and leave for 10mins to make it easy to roll.
  • Next, prep the radish, thinly slice the radish, add a pinch of salt, rub, then leave 10mins.
  • Loosely roll 5-6 portions of salmon.
  • Roll up the slices of cucumber
  • Remove the skin and seed from the avocado and slice the avocado on an angle.
  • Roll the Kinshi-Tamago (egg crepe) and julienne it thinly.
  • Chop the pickled ginger.
  • Put the cooked multigrain rice or white rice into a bowl and add 2 tbsp of sushi vinegar and the chopped pickled ginger. Mix well and you now have sushi rice.
  • Line your cake tin with plastic wrap, add the sushi rice, spread t evenly and and pack well.
  • Place a plate or a board on the cake tin and turn over the tin over.
  • Remove the cake tin and remove the plastic wrap.
  • Put the Kinshi-Tamago on the sushi rice.
  • Arrange the sliced avocado.
  • Now the rolled salmon and cucumber how you like.
  • Place the sliced radish and Tobiko.
  • You can use micro herbs or flowers for garnish.

About Hinamatsuri

Why suddenly talking about Hinamatsuri?
HInamatsuri is a festival to celebrate young girls growing strong and healthy and is held on the 3rd of March. We make festive food for Hinamatsuri such as Hinaarare, Hishimochi, and Chirashi sushi.
Chirashi sushi looks beautiful, lots of colour, and also use ingredients that are thought to be good luck charms. Prawn, Egg, Carrot, Legume, and Lotus Root are all though to have meaning and bring good things to your life.

Prawn:
Long life – the shape of a prawn resembles the bent back of an old person meaning you have lived a long life and when cooked, prawns turn red which is considered a lucky colour.

Egg (Kinshi-Tamago):
Yellow, like gold, the Kinshi Tamago is like a crepe and julienne cut inspires saving lots of money.

Carrot:
Carrot is a root vegetable and stands for a stable state in your life like roots in the earth.

Legume:
Legume in Japanese is “MAME”(豆) and we say hardworking, and diligent people are MAME…not legume hahaha.

Lotus root:
Lotus root has holes so this means your future prospects will be wonderful.

Best Nachos from Outside Box- Using Cacao Powder for Rich Taste.

I thought I didn’t need to put up an English version of my nacho recipe and video because you will find lots of them on YouTube.

But thankfully, I had requests from a few people to do this recipe in English.

Using cacao powder in the nacho sauce you will be surprised to find a rich, flavoursome nacho sauce.

Best Nachos

Using cacao powder and make taste rich

Ingredients

Nacho spice

  • 1 tbsp Cacao powder
  • ½ tbsp Oregano Dry
  • ½ tbsp Chilli powder
  • ½ tbsp paprika
  • ½ tbsp Cumin

Tomato salsa

  • 2 each Tomato (use only the flesh) (don’t throw away the seeds)
  • ½ each Red Onion
  • 80 g Cucumber
  • ½ each Jalapeño
  • 1 each Lime or lemon
  • 8 g Coriander
  • 2 tbsp Olive oil
  • ½ tsp Cumin
  • 1 tsp Salt
  • tsp Pepper

Guacamole

  • 1 each Avocado
  • 1 each Tomato (use only the flesh) (don’t throw away the seeds)
  • ½ each Jalapeno
  • 10 g Coriander
  • 1 each Lime or lemon
  • 1 tsp Salt
  • tsp Pepper

Nacho

  • 250 g Pork or beef minced
  • 1 tinned Red beans 400g
  • 1 each onion
  • ½ each Capsicum
  • 3 each tomato (from the salsa and guacamole) Use the seed part
  • All of Nacho spice
  • 1 tsp Garlic Minced
  • 2 tsp Honey
  • 1 tsp Salt
  • tsp Pepper
  • 3 tbsp Olive oil
  • 50x2 g Cheese
  • Tomato salsa
  • Guacamole
  • Sour cream
  • 150 g Corn chip

Instructions

  • Making the nacho spice – Put all spices into a bowl and mix well.

Making Tomato salsa

  • Wash all vegetables.
  • Cut tomato and remove seeds (don’t throw away the seed we will use later). Chop the tomato finely.
  • Chop onion finely and soak in water for 15mins.
  • Remove seeds from the cucumber and chop finely.
  • Cut the jalapeno in half, remove the seeds, then chop finely.
  • Remove stalks from coriander leaves then chop finely.
  • Strain the water from the onion and let it dry.
  • Put all ingredients into a bowl then add a squeeze of lime.
  • Add olive oil, cumin, salt and pepper and mix well.

Making Guacamole

  • wash all vegetables (not avocado).
  • Chop tomato skin and remove the seeds. (Don’t throw away the tomato seed, we’ll use later)
  • Chop jalapeno finely.
  • Chop coriander leaves finely.
  • Remove avocado skin and seed then put the flesh into a bowl and smash with a fork.
  • Add a squeeze of lime.
  • Add the tomato, jalapeño, coriander, salt and pepper then mix well and done.

Making Nacho

  • wash all vegetables.
  • Chop the onion.
  • Dice the capsicum.
  • Chop the tomato seed left from the salsa and guacamole.
  • Open tinned red beans and wash them.
  • Add 3 tbsp of olive oil into a pot turn heat to mid.
  • Add the nacho spice and stir.
  • Add the onion and stir.
  • Add minced garlic and stir then add the capsicum and stir.
  • Once the vegetables are soft, add the minced pork and cook through.
  • Add the red beans.
  • Add the tomato, honey, salt and pepper and stir and cook until moisture is gone.
  • In a while, preheat your oven to 180 ℃ and place corn chip into your baking dish and add 50g of cheese.
  • Place the nacho sauce to top of the corn chips and add another 50g of cheese.
  • Place the nacho into your oven and bake 8-10mins.
  • After 8-10mins, remove the nacho from your oven (be careful its hot!).
  • Place topping, the salsa, guacamole and sour cream, open your beer, and dig in!
