How to make Tonkatsu Sandwich & Recipe!

Today, I am introducing Tonkatsu-Sand (sandwich with tonakatsu). They are very popular in Japan because they are cheap and easy to eat. People buy sandwiches at convenience stores or you can buy tonkatsu sand bento at train stations to take on your business trip or holiday.
You can also make them at home, for lunch, dinner, bento for your kids, your family etc.

About the Ingredients
Pork:
This time I used boneless pork loin and sliced it how I wanted, but, you can also use ready-sliced pork loin.

BBQ sauce:
I use Japanese BBQ sauce such as Bulldog or Kagome which you can buy at Asian shops.
I saw tonkatsu sauce at Woolworth but I haven’t tried it yet so I don’t know what it is like.

Bread crumb:
I use Japanese “panko” breadcrumbs, you can buy these at Asian shops or Woolworths.

Bread:
You can use any bread you like such as sliced bread, panini, sour bread, hot dog bread etc.

Tonkatsu sandwich

Ingredients

  • 780 g Boneless Pork loin you can use already sliced pork loin
  • Salt A pinch For pork
  • ¼ cup Plain flour
  • 2 each Egg
  • 1 cup Japanese breadcrumbs
  • Cabbage or lettuce
  • Butter
  • Mustard
  • Japanese BBQ sauce you can use BBQ sauce you like
  • 2-4 each Panini you can use bread you like

Instructions

  • Clean the pork, remove the skin and slice into 3 fillets.
  • Break up the muscle fibres with a fork.
  • On a tray dusted with salt place the 3 sliced pork loin. Sprinkle salt on top of the pork and rub it in well.
  • Place kitchen paper on the tray, place the pork fillets on the tray, and cover a with kitchen paper. This is to remove excess moisture from the pork.
  • Cover with plastic and place the pork in a fridge for 30mins.
  • In the mean while prep for crumbing the pork. Crack 2 eggs into a bowl and whisk them.
  • Put 1 cup of breadcrumbs on a tray.
  • Take the pork from the fridge, cover evenly with plain flour removing any excess flour.
  • Dip the pork in the egg then cover both sides with the bread crumb.
  • Shred the cabbage.
  • Put oil into a deep pot (around 24cm diameter, add oil to a depth of about 3-3.5cm).
  • Heat up the oil to 170℃.
  • Put the pork into the oil and deep fry them until a golden colour.
  • Once the pork is cooked, remove the pork from the oil.
  • Cut the panini in half and lightly toast them. Butter, add mustard, and the shredded cabbage.
  • Place the tonkatsu on top of the cabbage and add the BBQ sauce. Add the other half of the panini and secure it with a toothpick.
  • Cut in half and serve.

Katsu Sando is said to have been invented by Toki Ishizaka at the Tonkatsu restaurant “Isen” in Ueno, Tokyo in 1935, and was officially called “Katsu Sando”.
At that time, Isen was often used by Geisha in the Hanayanagi. They wanted something to eat without removing their lipstick. Ishizaka made some small bread rolls and beat the pork with a knife for soften the meat so chopsticks weren’t needed and between the bread tonkatsu for Geisha to eat.

皆さんはスロッピージョーって知っていますか?
アメリカの家庭でよく作られて、子供から大人まで大好きなバーガーです。
ハンバーグのパティではなくてミートソースです。
食べるときには気をつけくださいね、白い洋服は避けた方がいいでしょう!

お肉は何を使用できるのか?
牛ひき肉でよく作られていますが、私は豚ひき肉のようが好きなので今回は豚ひき肉を使用しています。鶏ひき肉でも大丈夫です。

アレンジはできるのか?
今回のレシピは基本レシピのスロッピージョーですが、アレンジをしてメキシカン、イタリアンやスパイシーミートソースにしてもいいでしょう。

パンの種類は?
ホットドック用パン、普通の食パン、ブリオッシュ、バーガーバンス
お好みのパンで!

スロッピージョーと一緒に何を添えるの?
アメリカの家庭でよく見られるのはポテトチップス
もちろんポテトフライでも美味しいです。
私はコールスローを一緒に添えています。

ベジタリアン、ビーガンは?
大丈夫です、レンズ豆で使用してください。

スロッピージョー

トマトベースのミートソースをバーガーに挟んで

Ingredients

  • 250 g 豚ひき肉
  • 140 g 玉ねぎ
  • ½ パプリカ 赤いやつをお勧めします。甘味があります。
  • トマト
  • 小さじ ニンニク みじん切り
  • 小さじ マスタードパウダー
  • 小さじ 砂糖
  • 大さじ ウスターソース
  • 大さじ トマトペースト
  • 小さじ パプリカパウダー
  • ½ 小さじ
  • 小さじ 胡椒
  • 2 大さじ オリーブオイル
  • 4 バーガーバンズ
  • 4 スライスチーズ

Instructions

  • 玉ねぎはみじん切り。
  • パプリカは小口切り。
  • トマトのヘタをとり、ざく切り。
  • フライパンにオリーブオイルを追加して温める。
  • 中火にして玉ねぎを柔らかくなるまで炒める。
  • ニンニクを追加する。
  • マスタードパウダーとパプリカパウダーを追加する。
  • パプリカも追加して柔らかくなるまで炒める。
  • トマトを追加して炒める。
  • ひき肉を追加して炒める。
  • 砂糖、ウスターソース、トマトペースト、塩、胡椒を追加してよく混ぜ、水分がなくなるまで炒める。
  • バーガーバンズにバターを塗り、トーストしてチーズ、ミートソースをのせて、バンズのトップを乗せて出来上がり。

How to make Low FODMAP Pumpkin and Chicken Soup & Recipe

Do you know about FODMAP diets? Not many people do.

This diet is designed to help people with irritable bowel syndrome (IBS) figure out which foods will give you problems and which foods reduce symptoms.

How does work the low FODMAP diet work?
1. Try to not eat high FODMAP foods for 2-4 weeks (write down what you eat)
See FODMAP chart.

Look for changes in your physical condition. If there are changes go to next step but if not maybe high FODMAP foods are not a problem.

2. Reduce the foods from (1), eat little bit s and if nothing happens to your physical condition, these foods are safe. Repeat this action for 6-8weeks.
You don’t have to try eating all high FODMAP foods just try what you want to eat.

3. Whatever foods found gave you problems, try to avoid. Try to eat well balanced food.

Try to Avoid High FODMAP FOODS

• Sugar
• Onion, garlic etc
• Flour products
• Too many nuts
• Apple, pear, watermelon, stone fruit etc
• Lactose
• Legumes
• Etc… check the list above.

Check out low FODMAP foods online. Sometimes you find the list of low and high FODMAO is different compare other lists so you have to find what doesn’t agree with you, it will take time to find whatever.

Sounds tricky or difficult to make food a variety of food you have to avoid so many things but if you see the FODMAP list there is actually quite a lot you can choose from.

This recipe is using low FODMAP foods and one of my FODMAP idea.
Avoid onion, garlic, or any form of sugar, YES, these make your food taste good but this recipe without them tastes good and has a great flavour.

How to make Low FODMAP soup

Ingredients

Pumpkin Soup

  • 500 g Pumpkin *
  • 1.5 tbsp Rice oil *For roast pumpkin
  • ½ tsp Dry oregano *For roast pumpkin
  • ¼ tsp Cumin *For roast pumpkin
  • ½ tsp Salt *For roast pumpkin
  • 20 g Ginger
  • 1 tinned Coconut milk
  • 250 ml Rice milk
  • ½ tsp Turmeric
  • ¼ tsp Dry oregano
  • ¼ tsp cumin
  • ¼ tsp Mustard powder
  • ¼ tsp Paprika powder Sweet

Roasted chicken and vegetables

  • 200 g Chicken tenderloin
  • 1 tbsp Rice oil
  • ¼ tsp Cumin
  • ¼ tsp Mustard powder
  • ¼ tsp Turmeric
  • ¼ tsp Dry oregano
  • ¼ tsp Paprika powder Sweet
  • ½ tsp Salt
  • tsp Pepper
  • 80 g Eggplant
  • 100 g Squash
  • 100 g Carrot
  • 100 g broccolini
  • 80 g Brussel
  • 2 tbsp Rice oil
  • ½ tsp Paprika powder Sweet
  • ½ tsp Dry oregano
  • ½ tsp Turmeric powder
  • ¼ tsp Cumin
  • ½ tsp Salt
  • tsp pepper

Instructions

  • Preheat your oven to 180℃.
  • Remove the pumpkin’s skin. Cut the pumpkin in to bite-sized pieces and put them into a bowl
  • Add rice oil, oregano, cumin and salt into the bowl. Mix well them place the pumpkin onto a baking tray and bake 25-30mins in the oven.
  • Meanwhile, grate the ginger and cut all the vegetables (eggplant, squash, carrot brussel sprouts, and broccoli).
  • Put all the cut vegetables into a bowl. Add rice oil, paprika, cumin, turmeric, oregano, salt and pepper then mix well. Place them on a tray covered with baking paper.
  • Cut the chicken tenderloin in to bite-sized pieces and put them into another bowl. Add rice oil, cumin, mustard powder, turmeric, oregano, paprika, salt and pepper and mix well. Place the chicken on the tray with the cut vegetables.
  • Over a medium heat, add rice oil to a saucepan.
  • Add cumin, oregano, mustard powder, the grated ginger, and stir.
  • Add the roasted pumpkin into the saucepan then add the coconut milk and rice milk.
  • Bring to the boil then add salt and pepper then turn off the heat.
  • Blend well.
  • Put the vegetables and chicken in the oven for 20-25mins.
  • After 25mins, remove the vegetables and chicken from the oven.
  • Pour the pumpkin soup in to a bowl and place the veges and chicken on the soup
    Serve.
