How to make Sugar and Gluten Free Chocolate Chip Cookies

Hello, how are you everyone?

Today’s recipe is sugar and gluten free chocolate chip cookies.
Why did I make these cookies? My husband asked me to make chocolate chip and I made some. After he ate some, he felt sick from the cookies being too rich from so much sugar. He loves chocolate chip cookies, and I didn’t want to him give them up, so I decided to come up with a sugar and gluten free chocolate chip cookie recipe.

What did I use this recipe for?
For gluten free flour
• Almond meal
• Tapioca four
• Brown rice flour

For sugar
• Dates + hot water

For moisture
• Peanut butter
• Coconut oil
• Dates + hot water

About peanut butter
I use sugar, salt, and cream free peanut butter such as Absolute organic or Mayver’s peanut butter.

About chocolate chips
I found sugar free dark chocolate from Coles. You can use whatever chocolate you like if you don’t mind little bit sugar😝.

About Dates
I used dried pitted dates. If you use seeded dates, remove the seeds before putting in the blender.

Equipment

Ingredients
  

Wet ingredients

  • 200 g Dates
  • 215 ml Hot water
  • 80 g Peanut butter
  • 50 g Coconut oil (Virgin)
  • 1 each Egg

Dried ingredients

  • 200 g Almond meal
  • 80 g Tapioca flour
  • 50 g Brown rice flour
  • ½ tsp Baking powder
  • 100 g Chocolate chip Sugar free or any you like one

Instructions
 

  • Preheat the oven 160℃.

Prep for wet ingredients

  • Put dates and hot water into a bowl and leave 10-15mins.
  • Cut chocolate in to pieces.
  • Put the dates and hot water into a blender.
  • Add peanut butter, coconut oil and egg into the blender and blend well. This is the date mixture.
  • Pour the date mixture into a bigger bowl.
  • Add almond meal and baking powder into the bowl and mix well.
  • Add tapioca flour then mix well.
  • Add brown rice flour into the bowl and mix well.
  • Add ¾ of the chocolate pieces into the bowl and mix well.
  • Portion the cookie dough on a tray covered with baking paper.
  • Put the rest of the chocolate on the cookie dough.
  • Bake the cookies in the oven for 20mins.
  • After 20mins, remove the cookies from the oven and cool them on a rack.
